Black Pearl King

Black Pearl mushrooms are a new hybrid that blends the hearty texture of a King Trumpet oyster, and the growth style of a regular oyster mushroom. The name (Shimofuri) means “marbling” in the Japanese language. You can see in the image below that this mushroom has a beautiful marbled pattern on its cap. These mushrooms cook up like the king trumpet but have a softer, more tender texture like other oyster mushrooms. They have an earthy, umami flavor that is perfect for a meatless main or as part of another dish. You can use the entire mushroom - the cap and the stem. The texture is sometimes likened to abalone or scallops, which makes them an interesting option for vegetarians and are often billed as ‘mushroom steaks’ or ‘vegan scallops’. When shredded, this mushroom can be cooked as vegan pulled pork or carnitas.
