Pearl Oyster Mushroom

(Pleurotus ostreatus)

The pearl oyster mushroom is a choice edible, and is a delicacy in Japanese, Korean and Chinese cuisine. Pearl oysters get their name from the way that they look. Their color ranges from cream-colored to gray in appearance, reminiscent of a pearl. Like other oyster mushrooms, their overall shape has a somewhat seashell-like appearance. This might also contribute to the name. Like all oyster mushrooms, they can be used in a wide variety of different culinary dishes. They are frequently served on its own, in soups, stuffed, or in stir-fry recipes with soy sauce. Oyster mushrooms may be used in sauces, such as oyster sauce. The mushroom's taste has been described as mild with a slight odor similar to anise. Oyster mushrooms are used in the Czech and Slovak contemporary cuisine in soups and stews in a similar fashion to meat.
